THE SAUCEPAN: due to its size and its rectangular shape it can also be used for cooking n the traditional way. Because of the internal coating and the materials used this pan can also be used in the electric and gas oven up to 230°C, but do not use in microwave ovens. When mixing the food only use wooden or plastic forks and spoons.
THE TOP: its particular shape avoids the loss of steam during the cooking. Always remember to allow the water found under the top, to fall inside the pan every time that you uncover it for mixing or checking the cooking point. If it is necessary to add more water so as to finish the cooking you can add it by pouring it along the sides of the pan with out heating it before.
THE FLAME: or any other source of heating. It must be moderate at the beginning and reduced to its minimum to finish the cooking. Do not use a high flame because you will not obtain a satisfactory gastronomic result.
THE SALT: remember the quantity because YOU ARE NOT PUTTING THE SALT IN THE WATER BUT ONLY ON THE PASTA; if necessary you can add some salt once finished cooking.
THE DOSES: indicated are for three portions (200-250 gr. of pasta = 70-80 per person) but the E.CO PASTA SYSTEM® pan can cook very well up to 450-500 gr. of pasta; in this case all the ingredients must be proportionally increased, as well as the water, mixing more times, with care, to obtain an homogeneous cooking of the pasta.
BROWNING, MEAT SAUCE, ETC.: if you want to maintain some tasty habits you can use these specialities, prepared before, and used as a cooking base (adding the pasta and a few glasses of water; for the rice look at he recipe "SEA FOOD RISOTTO"), or cooking the pasta or the rice alone, using once they are cooked your favourite sauce as usual.
THE CLEANING: the first time that you use the pan clean the internal part with a piece of cloth or tissue dipped in olive oil so as to remove the protective layer. After using it hand wash the pan using a normal liquid soap and use a soft sponge, do not use steel wool or abrasive products that can ruin the internal coating.
