TAGLIATELLE WITH BABY COURGETTES
Cut two or three baby courgettes into thin slices. Finely chop parsley, garlic and onions. Put all ingredients into the E.CO PASTA SYSTEM® pan with a glass of water. Add the tagliatelle (freshly made or packet) into the pan and season with salt. Cover and cook on a moderate heat for about ten minutes. Remove lid, taking care that the condensation that has formed on the underside of the lid drips into the pan, and mix the pasta with the courgettes. Return to heat and simmer for five to eight minutes, depending on the pasta cooking time. Add olive oil and garnish with chopped parsley and grated Parmesan cheese. Variation to the recipe: Use mushrooms, artichokes or aubergines instead of courgettes. Note that you may have to cook the harder vegetables a little longer. |
